    Easter is Sunday, and many of us will be celebrating somehow. Usually, we have ham, potato salad, and other sides, depending on who is around. But my favorites, even as a child were the desserts- let’s not forget that Easter basket candy.

    I’m not sure yet what we are doing this year. It’s just Manny and me, and we may have our neighbors over unless they are busy, so we are all waiting to decide mid-week.

    What are your Easter plans? What will be on your plate? Share some of your favorite Easter dishes.

    So, No one here is celebrating Easter this year? It must have been the “ham” word. Yeah- I know, it’s high in sodium, but it’s something I eat in moderation when we do have it. Manny may decide to BBQ but is still undecided, so let’s hear your plans?

      Hey Jen, I’m not a big fan of ham but my guys love it so we will be having it for Easter. I still put together Easter baskets for Brian and the boys. I really love doing things like that so they can expect to receive on for as long as I’m alive.

        Hi @colleensteele, thanks to you; Manny did end with an Easter basket. KK called yesterday on her way home from Florida and said she looked for her Easter basket and said, “that darn rabbit must have forgotten about me.” But I reminded her that she had been out of town for a week in Florida. He probably lost track. Hehe

        I hope that you and the family enjoyed a relaxing Easter weekend.

    Hi @colleensteele, well, I’m not sure we will make the little ham I bought because our neighbors have a family member in the hospital, so they are busy with that. Since it’s just Manny and me, I think we may do something different this year. Who knows what they may be, hehe.

    Is anyone having BBQ or something other than ham this weekend to celebrate Easter?

    Colleen, I love that about your Easter baskets. This is the first year that I haven’t made any baskets. But I may run out soon and see if I can get a few things to do for Manny with all the candy I like. My late grandmother always had a large family basket of Easter candy on her table for Easter dinner. She always had the best candy. Of course, she made us grandkids a small basket each, and our parents( aka Easter Bunny) did.

    <b>PRAWNS , </b><i style=”font-weight: bold;”>PRAWNS </i>and more prawns.

    The Boss and myself will be celebrating by ourselves as one daughter is on a six month holiday touring Asia and Europe , another getting their boat ready to go up to the Great Barrier Reef for winter and the third 2,000 klms away. So I went sailing yesterday ,Good Friday , and on the way home dropped into our local fish wholesaler , I’m the wholesailor he is the wholesaler,  to get our friday fresh snapper grilled ,chips and sea scollop for for tea. While waiting had a look at all the fresh seafoods ,boy China did us a favour putting an embargo on our seafood a yeR or so ago.  Rock Lobsters , Oysters , Mud Crabs , Moreton Bay Bugs AND different varieties of Prawns . Then all the fresh fishes.  Got to much for me so I bought a kilo of Ocean King Prawns . Mate a kilo of  Prawns for two oldies . I’m starting today ( Saturday ) with a prawns feast for lunch and Prawn salad for tea. Might let the boss have one on Sunday. Happy Easter .

      @terry now that is an Easter meal I would really enjoy! I’m not a big fan of ham but my guys love it so that is what we are having.

      It sounds like you raised 3 very independent and adventurous kids. That is some really exciting destinations they are exploring.

      Oh wow, @terry, that sounds delicious! I’m a tad jealous of all of that fresh local seafood. But Manny did end up doing a spicy shrimp boil for us, which was much better than ham for me. I was a tad out of commission, so he did the cooking except for the garlic butter. (Shh- you didn’t read that part, hehe.)

      Terry, your kids, sound even more adventurous than my daughter. I love that because I never traveled as much as I would have liked, especially abroad. I love the water since I practically grew up with my dad’s family on the water.

      Thanks for sharing; now I’ll have to let Manny know he needs to step up his game. He’ll appreciate this coming from you, Mate.

    Hey, y’all, it’s almost Easter again. What is everyone planning to do on Easter weekend?

    Do you have a favorite Easter candy? It can be currently or as a child. Peeps are everywhere and in a ton of flavors this year. Where are our Peep fans? My mom has always lived with them. I did way them as a kid but no longer care for them.

    I like chocolate and sour jelly beans. Robin eggs are also a fave of mine.

    What’s everyone planning this Easter and Passover weekend? We have yet to decide. I have experienced exacerbated PH and CKD symptoms off/on for about a week. Today is some better, thank God.

    My doctor ordered a Z-pak yesterday to start my nebulizer treatments as needed. If it’s not cleared by Monday, she wants me to get a chest x-ray and see if I need steroids. But I also feel like a cold is coming on with a bit of cough and congestion.

    So, unless this all clears up fast, like by tomorrow afternoon, we will be spending a quiet Easter together (Manny, Zoe, and me). I may see if I can find a sunrise service for Easter morning. That would be nice near the beach.

    Share your plans. Has anyone made any desserts or dyed Easter eggs with kids or grandkids this year? Each year those are the sweet, heartfelt memories I hold on to when my KK was little.

    Colleen and I wish y’all a special and relaxing Easter weekend. Make sure you spend time with loved ones if you can. Hopefully, you will find your favorite treats in your Easter basket.

    Happy Easter to everyone from the PH News team! We hope to see @Colleen back with us soon when she’s ready. I know we’ve missed her, and she has missed you all, you!

    Do you have any plans for Easter? Unfortunately, my daughter is out of town, and I am fighting off a cold. So, Manny and I plan to make the most of the expected rainy day on Easter. Let us know what you’re planning to do. If you’re not sure yet, feel free to share some of your childhood memories of Easter.

    Do you believe we are less than a month away from Easter? Does anyone have any plans this upcoming Easter holiday?

    We are going to visit family in Texas. It should be lovely because KK is going, and my Dad and Nephew will also be there with the rest of us to have everyone there. I think it’s important for both of my parents, although divorced years ago, to see us all together.

    What about you all? Are you already planning?

        Hi @Colleen, we are excited but not ready yet. Of course, I’ll probably be packing at the last minute. We’re flying, thankfully, two of our tickets are covered with points, so we lucked out there.

        Hi @Colleen , yes, I have now changed and usually wait until the last minute to pack, etc.
        Yes, I’ll have my cast for that trip. I’m not thrilled about that, but I’ll know how those who use pumps feel when they miss water activities like boating and swimming.

        @Jen, you could get a splash guard, or I think they have water proof covers for bathing, so you could enjoy the water at least a little.

        Hi @Colleen , I have a few different types of covering I use in the shower with my cast. I already have one in my pile of things to pack. Suitcase is out and that’s where I am with packing, LOL.

        I purchased them on Amazon, as my Ortho told me about one, although shje said it’s not a great idea to swim.

    Easter is a little later this year, but hard to believe it will be here soon. We usually gather at my daughter’s house, with family from her side and from my son-in-laws’s side. Most of us go to church in the morning, and we make our meal a little later in the day. We usually do an Easter egg hunt for the younger ones.

    However, this year will be a little different, much more low key with no large gathering. The reason: Ali is expecting her 5th baby! She finds out girl or boy on April 9 (my birthday), so we’re doing a reveal party/meal on the Sunday before Easter, so it would be too much to do a big meal on Easter Sunday as well.

    Her last child (a little boy – after 3 girls), was a surprise, but this baby is a shock! But after the shock wore off, everyone is getting excited. I’ll be Nana again to a precious little bundle.🤩🙂

    We are still trying to decide. We might do lasagna, maybe ham, broccoli cheddar casserole. We just can’t decide really. Kinda boring….

      @hkt Whatever you decide to make I’m sure it will be delicious. We will have a very low-key Easter, but that can be nice. I’ll probably make a small ham and maybe homemade potato salad because that is my dad’s favorite. Do you have any Easter traditions you will be following? I will attend Mass and make Easter baskets for my parents. I love putting Easter baskets together, even for adults.

        I have a son who is 21 and a daughter who is 26 that I still do Easter baskets for. In addition to them, I now also do Easter baskets for my son in lay who is 25 and his 2 younger siblings ages 16 and 19 that my son in law has custody of. I was doing my son in laws even when he and my daughter were dating/engaged and then when his siblings became a part of my family 3 years ago, I started doing it for them also. My mom and I are usually the ones that cook. My dad passed in 2001 and I’m an only child, so my mom and I are always together. Have a great Easter!

        @hkt My sons are 24 and 25, and I make baskets for them too! My oldest and I live in NJ, but my other son is back in WA. I make an Easter bag for him because that is easier to mail. BTW…I’m an only child too!

        Hi @hkt , I love that you shared making Easter baskets for your grown kids and extended family. That’s so kind! All of the food sounds great, no matter what you choose. Is your broccoli cheddar casserole with rice another one of my favorites? 😋

        Because we are traveling (by plane) to Texas for Easter, I will see what I can contribute to our family Easter dinner. I also hope to attend church services with my mom and her new husband. But with my right and dominant hand in a cast, I may just enjoy eating this year and possibly picking up something to take. Time will tell.

        The broccoli cheddar casserole is without rice, but lots of broccoli, cheese and Ritz cracker topping. I think we’ve decided on that, baked rigatoni, meatballs and sausage, maybe ham/mashed potatoes too. Some don’t like pasta/meatballs/sausage and some don’t like ham, so we’ll probably do it all, or maybe ham/mac and cheese. For dessert, we’ve decided on Lemon meringue pie, carrot cake, and either peanut butter pie, or I’m going to look for a recipe for the cookies that are on wedding trays with the frosting on top. My son went to Texas in December with his close friends in high school. They surprised on of their classmates that moved to Texas. Have a great Easter!

        Hi, @hkt , your broccoli cheese casserole is similar, except we usually add rice. I may have to try it without rice. And, because I’ll now be craving it, I have those ingredients, maybe I’ll try it for lunch. LOL

        It sounds like you have everyone covered with various foods at Easter. That’s my kind of meal, when I can eat a spoonful of each and be satisfied…or overstuffed. hehe

        It’s so cool that your son and a friend surprised their other friend in Texas. We are looking forward to seeing family and friends. I bet the time flies. We aren’t leaving until next week.

        Hi, @Colleen , yummy- homemade potato salad is one of my favorites too! Your dad will be so excited when you make it for him on Easter. Is there a specific ingredient or variation you will make that he enjoys? What’s your favorite? Do you have any after Easter treats like Thanksgiving using the leftover ham?

        How long will Cullen be off from school for Easter? Does he have another break, or is it just the long weekend?


        Please excuse any typos in my messages this week (month). I’m trying to use voice dictation to help me communicate with everyone in the forums.

        I love that you will also make Easter baskets for your parents and grown babies. I also make an Easter basket for KK. Usually, I buy a little candy or something for my two nieces and one nephew, but now that they’re growing up, we’ll see.

        The only problem I see with your post is who is going to make your Easter basket. Is it something that you and Brian did for each other before you had kids, or even after you had kids? Or was it something you just did for the kids and your parents?

        @jen-cueva I haven’t made homemade potato salad in a long time. I’m hoping my parents will remember their recipe. Italian salad dressing and dill are their secret ingredients.

        I will make a basket for myself. My Easter basket and Christmas stocking are usually lighter than everyone else but I swear, my joy comes from filling everyone elses.

        Cullen comes home for Easter on the 16th but only for a few days. When he returns he is there for a week of finals then back home for the summer!

    I’m excited about having 99% of our immediate family coming for Easter dinner. I will make ham, pineapple bake, provide rye bread, butter, wine, and beer. The rest of the family members will bring green bean casserole, mashed potatoes, Mac n cheese, salad, cheesecake, pumpkin pie, and kid beverages. Having family together warms my heart.

      What’s a pineapple bake? I’ve not heard of that before. Wine, beer, and beverages for the kids are a given!😉 Do you have a large family? How many will be there since you mention 99%?

    Hi Jen! Pineapple bake is a simple recipe,: 1 stick butter melted, 3 eggs slightly beaten, 1/2 cup sugar, 4 slices fresh white bread crumbled,, 1 20 oz. Can crushed pineapple undrained. Mix altogether, pour in a 1 1/2 quart casserole, bake at 350 covered for 30 minutes and uncovered for 15. Serves 4. We have 17 in our family but one is a Marine stationed in Okinawa, Japan so he won’t be joining us. Please feel better.

    As I posted before, Easter Sunday will be casual with few people and only finger foods/snacks and an egg hunt; we had a gathering for the gender reveal party this weekend, so 2 weekends in a row for lots of food is hard. BTW, it’s a girl!

    Thank you Jen. We are very excited about the new little bundle – should arrive around August 25.

    My birthday was good. Sort of laid back on the actual day, but the Sunday before I was taken to dinner at an Italian restaurant. Then we had dessert at Ali’s house. It was not as traumatic as I thought it would be turning 70! Lol

    I wish you a safe and blessed Easter too. Let that arm heal….keeping you in my prayers.
